While the Maison now has numerous boutiques in Paris and its surrounding suburbs, it all began in 1761, at 35 rue du Faubourg Montmartre in Paris. It took the name "Mère de Famille" at the beginning of the 19th century, when Marie-Adélaïde Bridault brought unprecedented fame to her chocolate shop thanks to her creations as delicious as they were daring. Unchanged since the end of the 19th century, the historic boutique with its authentic charm is a unique place full of emotion. Among the dozens of chocolate recipes and specialties created over the years by the Maison, our famous praline rocks, our grand cru bars, our iconic spread, and of course our essential Montmartre palets have won many hearts.

The secrets of our luxury chocolates

There's no secret: to create a luxury chocolate capable of melting the most demanding gourmets, the House leaves nothing to chance.

The rigorous selection of the finest cocoa beans

Because we know what we want, we travel the world to select premium natural ingredients. We purchase our cocoa beans directly from Haiti, Madagascar, Peru, and other plantations we carefully select for their values ​​and high standards. The beans are harvested by hand, and the pods are emptied on site for an initial sorting. The beans then dry in direct sunlight for one to three weeks, during which they are regularly stirred. Fermentation then takes place in wooden crates, where the beans' aromas begin to develop. They are finally placed in jute bags and shipped to our factory, where our chocolatiers take over.

A manufacturing process that respects artisanal traditions

To stay close to the shops and preserve local traditions, À la Mère de Famille makes its chocolates in its Chambray-lès-Tours factory, where homemade recipes and exceptional expertise are constantly being improved. The beans are roasted upon arrival, shelled, crushed, and then ground to obtain the cocoa paste. Next comes the essential step of conching, which reveals all the chocolate's flavor and smoothness. Finally, the cocoa mass is tempered to obtain the perfect, shiny, and smooth texture of our couverture chocolate, the foundation of all our recipes.
