What is the recipe for À la Mère de Famille chocolate truffles?
As with all of our creations, our first and perhaps most important ingredient is the passion we instill in each of our delicacies. The second is the rigor with which we select our raw materials and cocoa beans directly from producers who share our values and our vision of goodness.

, our chocolatiers prepare a creamy ganache from dark chocolate and whole liquid cream. They add a touch of fresh butter to provide consistency and dairy notes. The proportions are essential to obtain a truffle center that is as melting as it is soft. The dough is then shaped using artisanal methods to form the bonbons, before coating them by hand with a couverture of pure origin chocolate identical to that of the ganache, then dusting it with cocoa powder.
What is the origin of chocolate truffles?
Did you know that these delicious dark chocolate candies are the result of a mishap? In December 1895, Louis Dufour, a pastry chef in Chambéry, Savoie, lacked the raw materials to make his end-of-year treats. Refusing to buy from a competitor, he decided to use what he had on hand and mixed vanilla, crème fraîche, and cocoa powder to make small balls. He then dipped them in melted chocolate to
make them presentable, before coating them with cocoa powder. The chocolate truffle was born!
How to store chocolate truffles?
Delicate product that prefers cool temperatures
, truffles are consumed quickly after production. To store them in optimal conditions, the refrigerator is not ideal, as chocolate absorbs all odors. It is better to store them in a cool room or cupboard... and not keep your treat waiting!
What are the differences between a chocolate truffle and a praline?
We are sometimes asked this question in our À la Mère de Famille stores. The answer is: they have nothing to do with each other 🙂! The soft heart of truffles is a ganache made with cream and chocolate, sometimes flavored with vanilla or other flavors depending on the recipe. A praline (or praline) is made from caramelized dried fruits, mixed with chocolate. Their flavors and textures are therefore very different, to the delight of gourmets who can thus vary the pleasures.
