So, to ensure the excellence of its products, the company oversees the entire production process – from choosing cooperatives, cocoa beans and dried fruits, to blending different beans and adjusting flavours to obtain the type of couverture chocolate or praline they desire.

Our expertise
À la Mère de Famille produces thousands of different products, almost all of which they manufacture themselves. Although the Dolfi family adore their florentines, rum babas, Négus (caramels), Palets Or (ganache) and praline chocolates, what they really love is being surrounded by men and women who are as talented and passionate as they are. Chocolatiers, bakers, confectioners, ice-cream and macaron makers and kitchen staff who, collectively, help produce their vast range of sweet products.

A family business
À la Mère de Famille is primarily an historic chocolate and confectionery business. But it is also about a family: the Dolfi family. For the oldest chocolate-maker in Paris, it all began in 1761 when Pierre-Jean Bernard, a young grocer from Coulommiers, together with his family, moved to 35, rue du Faubourg Montmartre to set up business. Some 240 years later, in the year 2000, history repeated itself when Étienne Dolfi, then a confectioner and supplier to À la Mère de Famille, took ownership of the property with his children Sophie, Steve, Jane and later Jonathan.
